Yes, chalk would make the most sense. It's a temporary exhibit, I presume, so chalk would be easier to wash away. But you can do vibrant, unique pieces with it... and it would be the best kind of medium for this sort of surface.

And of course the vendor catches his interest immediately, offers him a chance to smell and even taste her wares if he's willing. He doesn't smile, but his eyes light with fire as he accepts the offer, grabbing one of the sample bags to examine with care]
Would you look at this? It's the color of paint. I'm almost afraid to put this in a dish.
[Oh, but the smell once he opens the bag. No surprise that it nearly sets his hair alight, this is probably a chili pepper of some sort. Not for the faint of heart, the vendor promises.
[ For a brief moment, Yusuke is almost tempted to step back and immortalise that moment and look in memory to transfer to canvas or paper later. Itâs not that he hasnât seen it before - he surrounds himself with artists of every walk of life, and has seen variations on it before. But it looks so bright and vibrant on Sanji; raw and untempered on someone who is still learning just how passionate they are about their art.
Itâs endearing and intriguing all at once.
Spice and food itself might not be the medium that fuels Yusukeâs creativity, personally, but he can appreciate the rich, bright colour of it - like a slash of paint on canvas. ]

My initial impression would be âvery niceâ, but that seems like a good enough reason.
